This surprisingly spicy plant-based grilled cheese is inspired by the classic happy hour snack: jalapeño poppers. This bold sandwich does not skimp on flavor, with a Tribeca Oven Sourdough baguette layered with seasoned vegan cream cheese and vegan cheddar, then stuffed with smoky roasted mushrooms and hot peppers. The result is a decadent umami bomb with a great hit of heat.
Jackfruit comes from the same family of fruits as figs, mulberries and breadfruit that grows well in tropical climates. A staple in many Southern and Southeast Asian cuisines, jackfruit has grown in popularity over the last decade in Western cultures as a plant based meat substitute, often taking the place of pulled pork. Ripe, uncooked jackfruit has a pineapple/banana-esque flavor; most jackfruit used for vegetarian cooking is boiled and shredded with a relatively mild flavor that is highly absorbent of spices and sauces.
Here, we use this unique product in a grilled cheese sandwich that adds mac-and-cheese and collard greens. It’s like a BBQ platter in handheld form! For such an overstuffed sandwich, use Tribeca Oven French Baguette, which is sturdy enough to stand up to these juicy ingredients!
