Green Goddess Hummus with Focaccia Crackers

  • 2 15 oz cans Chickpeas, drained
  • 1/2 cup Tahini
  • 1/4 cup Extra Virgin Olive Oil plus more for serving
  • 1/4 cup Baby Spinach packed
  • 1/2 cup Fresh Parsley loosely packed
  • 1/4 cup Basil Leaves packed
  • 1 Green Onion trimmed and roughly chopped
  • 1/2 cup Fresh Lemon Juice
  • 2 cloves Garlic peeled and smashed
  • 1/2 tsp Kosher Salt

Focaccia Crackers


  • Combine all ingredients for hummus in bowl of food processor or high-powered blender. Blend until smooth and creamy, about 2-3 minutes, stopping to scrape down sides of bowl or blender jar as needed. Season with additional salt, to taste.
  • When all ingredients are combined and mixture is smooth, slowly drizzle in 1-2 tablespoons of cold water with motor running for even more creamy hummus. Transfer mixture to serving bowl, or store covered in refrigerator until ready to serve.
  • Preheat oven to broil. Cut focaccia in half lengthwise. Cut each half into short, thin strips. Toss focaccia strips with olive oil on rimmed baking sheet, then arrange slices cut-side-up in single layer. Toast under broiler until golden-brown and crisp, 2-3 minutes.
  • Top hummus with drizzle of olive oil and sprinkle with fresh herbs. Serve with golden focaccia crackers.
