Multigrain Bistro Salmon Burger

Ingredients

Chipotle Pesto Spread: 

  • 1/2 cup Chipotle peppers in adobo sauce
  • 1 cup Basil, fresh
  • 1/4 cup Pine nuts
  • 2 each Garlic, cloves
  • 3/4 cup Extra virgin olive oil

Instructions

  • Prepare Tribeca Oven Multigrain Bistro Rolls per package instructions. Set aside for service. 
  • Chipotle Pesto Spread: in a food processor by processing chipotle peppers in adobo sauce, cilantro, basil, pine nuts, garlic, and olive oil. Set aside for service. Cover, label, date, and refrigerate. 
  • Reduce balsamic vinegar by half. Set aside for service in a squeeze bottle. Cover, label, date, and refrigerate. 
  • For service per order, cook salmon burgers to order, split and toast Tribeca Oven Multigrain Bistro Rolls. Meanwhile, dress 1 cup of arugula with a drizzle of lemon juice (about ½ tsp). Build sandwiches by adding chipotle pesto spread bottom Tribeca Oven Multigrain Bistro Roll and balsamic reduction on top, adding salmon burger, dressed arugula, and finish with additional balsamic reduction.
