Ingredients

Sauce

  • 2 tbsp Extra virgin olive oil
  • 1/2 cup Onion medium, diced
  • 2 cloves Garlic sliced
  • 28 oz Tomatoes crushed
  • Salt & Pepper to taste

Fried Chicken

  • 1 large Chicken breast cut in half lengthwise
  • 1/2 cup Flour
  • 1 Egg beaten
  • 1/2 cup Breadcrumbs

Instructions

  • Preheat oven to 375°F. Preheat fryer to 350°F.
  • Make tomato sauce, add extra virgin olive oil to pot and heat until shimmering. Add onion and garlic and sauté until softened.
  • Add crushed tomatoes to pot and season with salt and pepper to taste. Bring to boil over medium heat then reduce heat and simmer for 30 minutes.
  • Prepare chicken, in separate bowls place four, egg, and breadcrumbs. Place 1 half of chicken breast sliced lengthwise into flour, then egg, then breadcrumbs. Repeat with the other piece of chicken.
  • Fry chicken pieces until golden brown and chicken has reached an internal temperature of at least 165°F.Set aside on wire rack.
  • To build sandwiches, warm the Tribeca Oven Olive Oil Panino in 375°Foven for 1 minute. Then slice each piece of panino lengthwise. Place about ¼cup of tomato sauce on the bottom piece of bread, then top with 1 piece of fried chicken, then top with 2 tbsp parmesan (about half of ¼ cup), then another ¼ cup of tomato sauce, and finish with 2-3 slices of fresh mozzarella cheese. Repeat with remaining chicken and panino.
  • Place sandwiches in oven or cheese melter to gently warm cheese, and warm top half of bread as well then remove from oven and complete sandwiches by placing top half of bread on top of cheese.
