Cucumber and Radish Sandwich

Ingredients

  • 1 Tribeca Oven Multigrain Loaf
  • 1 cup Mascarpone room temperature
  • 1 tbsp Fresh Dill chopped
  • 1 tbsp Fresh Chives chopped
  • Salt & Pepper to taste
  • 1 Cucumber thinly sliced
  • 4 Radishes thinly sliced

Instructions

  • Slice Tribeca Oven Multigrain Loaf widthwise into eight 1/2-inch-thick slices. Set aside until ready to build the sandwich.
  • In a small bowl, mix mascarpone, dill and chives together until smooth. Season with salt and pepper, to taste.
  • To build the sandwich, coat one side of each bread slice evenly with mascarpone mixture. Evenly layer cucumber and radishes between 4 bread slices, mascarpone-side-up. Top with remaining bread slices, mascarpone-side-down. Slice and serve.

Notes

Tip: Cream cheese or Neufchâtel can be used as a substitute for mascarpone.
