Create the egg wash by beating one egg and adding a pinch of salt.
Slice goat cheese into ½ inch thick slices, using a knife dipped first in hot water. Lightly coat each slice first with flour, then in the egg wash, and lastly with bread crumbs. Then set aside.
Next, cut the baguette into ½inch slices on a 45° degree angle, and toast.
While the baguette slices are toasting, create the Frisée salad by mixing the lettuce, tomatoes, carrots, cucumbers, shallots, and dressing in a bowl.
Once mixed, divide into 2 plates and top each with 2-3 toasted baguette slices.
Next, place a frying pan on the stove with 1 tbsp. of olive oil on high heat. Once the pan has warmed up, cook each slice for 2 to 3 minutes on each side until crispy and golden. Place the cheese on top of the toasted bread and serve.
