Combine all ingredients for hummus in bowl of food processor or high-powered blender. Blend until smooth and creamy, about 2-3 minutes, stopping to scrape down sides of bowl or blender jar as needed. Season with additional salt, to taste.
When all ingredients are combined and mixture is smooth, slowly drizzle in 1-2 tablespoons of cold water with motor running for even more creamy hummus. Transfer mixture to serving bowl, or store covered in refrigerator until ready to serve.
Preheat oven to broil. Cut focaccia in half lengthwise. Cut each half into short, thin strips. Toss focaccia strips with olive oil on rimmed baking sheet, then arrange slices cut-side-up in single layer. Toast under broiler until golden-brown and crisp, 2-3 minutes.
Top hummus with drizzle of olive oil and sprinkle with fresh herbs. Serve with golden focaccia crackers.
